First night in Rome with the gang! I can see we are going to have a blast. Spent the evening at Lucia’s house. Having a cooking class and eating. Carbonara and Tiramisu. She taught us how to make it in her little apartment.
She was really smart and explained so many things to us about how the Italian government won't allow the use of hormones in the meat, or certain chemicals on the produce, etc. She thinks this is why Italians don't have the weight problems. She says they eat a lot of carbs and veggies, but it's mostly organic, plus smaller amounts of meat and cheese. Not a lot of sugar or desserts.
We started with the Tiramisu, because it needs to sit in the fridge. The custarty stuff was make by whipping the egg whites, by hand, adding a bit of sugar and the egg yolks eventually.
Dunking the cookies that are not very sweet in but a light wafer type thing in coffee. Super yummy, especially the next day after it sits.
The Carbonara, she says should be made with the "cheek of the pig".
She explained why Italians keep things simple. Not too many spices. But really taste the flavor of the food. Not covering them up.
Cheese with jam or honey! Yummy!
